I’m sure you’re all too busy today slowly roasting turkey and gnawing on your arm trying not to inhale the crispy bits of stuffing on the edges of the pan to be visiting me here. I hope that your holiday dinner today is delicious and that, like mine, it begins at 2pm and involves a houseful of family.
Despite the fact that we have upwards of 40 people at the Lapine Thanksgiving every year, we always have tons of leftovers. We’re Jews, after all.
If you wind up in the same boat today, and that boat includes 4 pounds of white meat turkey, I have a week’s worth of healthy (ish) recipes that will help transform your Thanksgiving leftovers into something worth gobbling again.
1. Turnip Hash with Basil Vinaigrette | 2. Easy Vegetarian Tortilla Soup | 3. Butternut Squash Mac and Cheese | 4. Roasted Pumpkin with Arugula and Miso | 5. Chicken Tikka Masala | 6. Roasted Potato and Green Bean Salad with Almond-Chive Pesto | 7. Spicy Smoked Turkey Melt with Pepperjack
