I’m generally not the biggest fan of Valentine’s Day. But since it comes along so close to the New Year, I think it can be a nice to time to check-in and set intentions for your relationship. For those of you who add some sort of healthy eating resolution to your list every year, this might be the time to make a pact together on how you’re actually going to make good on those promises.
Sometimes it’s our significant other that actually feeds some of these bad eating habits – something I talked about around this time last year on CBS Live From The Couch. In the spirit of spending quality time together over food that makes your heart and body feel fulfilled, I put together some easy healthy weeknight meals that will be perfect to incorporate into your repertoire once all that chocolate, steak, and cheese has been inhaled this evening.
1. Quinoa Fried Rice | 2. Ginger Salmon Burgers with Grilled Scallions | 3. Vegetarian White Bean and Chard Stew | 4. Cauliflower Caponata Pasta | 5. Mushroom Tacos with Mexican Brown Rice | 6. Shrimp Stir Fry with Brown Rice, Bok Choy, and Peanut Sauce | 7. Chicken Paillard with Chopped Salad Nicoise
Yum! All the dishes sound tasty. I’m partial to anything in a corn tortilla, so I’m excited to try the mushroom tacos soon. 🙂
Awesome! Thanks, Miachel!
