It’s been a while since I threw some schwag your way! But my birthday is coming up, so I wanted to get my karma in the right place. (This year in lieu of gifts, I’ll be asking for presents.)
Come fall, everyone seems to be entertaining. I myself am having 9 girls over for dinner tonight and realize that the only plates I have 9 of are dessert-sized. Which, when you’re entertaining people in a studio apartment at a coffee table, is not necessarily a bad thing.
That said, I think most of us would benefit from a few complete adult-esque pieces. And one I’m always left pining for is a new flatware set. Listen, my favorite fall party dish is cozy, it’s comforting, it’s veg-friendly. It’s the Portabello Mushroom Lasagna from your friend and mine, Ina Garten. (Ok, she ACTUALLY is your friend. And she is mine too… in my mind.) It’s warm and hearty, but it doesn’t feel too heavy despite the creamy bechamel/noodle combo. And when you bake it, the top gets some amazing crispy edges, which my friends like to call lasagna chips. It’s basically a hug that you eat. I mean, how great is that?

I love pasta with butternut squash cubes and sage. It’s super easy and CHEAP to make in larger portions when entertaining, and people always seem to be impressed!

Mushroom risotto with rosemary and thyme is a fall fave in my house and easy to make in large quantities for guests! Wish I were having dinner at your coffee table! xx

Since the holidays for me HAVE to include potato salad, during the fall I love making a sweet potato salad with pears and rosemary. Sometimes I’ll add figs to the mix!

Always roast chicken thighs on some medley of root veggies. Always my go to! Spice changes as does theme of the dish – but it always goes down well.

There are infinite possibilities when it comes to fall entertaining. My favorite is to make a variety of homemade pizzas with all sorts of different toppings so that I will be sure to please everyone! Pizza is super cheap to make and very easy to produce in large quantities – plus your guests will be extra impressed when you tell them the dough was made from scratch. (You can always substitute ingredients to make gluten-free or whole-wheat crusts as well)
I use this dough recipe:
2 cups warm water
2 tsp. yeast
1 T salt
1 T olive oil
5 cup bread flour
1. Whisk together yeast and warm water
2. Add in bread flour and salt and whisk until dough forms
3. Add olive oil and knead dough until smooth
4. Cover and allow to rest overnight
**Prior to baking brush the dough with a good basil or garlic oil to add extra flavor
Some of my favorite topping combinations:
– Goat Cheese with caramelized onions and honey
– White pizza with Arugula, Shrimp and lemon/olive oil
– Classic tomato & basil with mozzarella and artichokes
– Mozzarella & Fontina with fresh tomato, pesto, and mushrooms

For a fall dinner party go-to, I love a Moroccan beet salad with cumin, garlic, and lemon and olive oil. It’s root vegetable time!

For the fall I love pork dishes – especially slow roasted to they just fall apart. I do boneless pork chops in an enamel cast iron pot with sauteed apples, cranberries and shallots – cover with sparkling apple cider and enough veg stock that they are submerged – 325 for two hours and served over mashed sweet potatoes. Added bonus – it keeps me out of the kitchen while I have guests over.
