Big Apple Guacamole with Sweet & Savory Baked Tortilla Chips
2tablespoonsfinely mined red onion
1large chipotle chili in adobo sauceplus 1 teaspoon sauce, minced
1/2cupfinely diced Fuji or Gala apple
¼cupfinely chopped cilantro leaves
4Avocados from Mexico
Juice of 2 limes
Sweet & savory baked tortilla chips
Combine all the ingredients in a large mixing bowl. Using a potato masher or fork, mash the avocados until semi-smooth, making sure there are still a few coarse chunks. Taste for seasoning and add more salt or chipotle as necessary.
Garnish with diced apple and serve alongside sweet & savory baked tortilla chips.
