Cilantro-Ginger Sauce

Ingredients

  • 1 bunch cilantro
  • 1 large garlic clove
  • 1 small shallot (or 1/4 cup finely chopped chives)
  • 1- inch fresh ginger root , peeled
  • 2 tablespoons lemon or lime juice
  • 2 tablespoons grapeseed or other neutral oil
  • 1/2 teaspoon sea salt

Instructions

  • Combine all the ingredients in a food processor or blender. Add 1/4 cup of water and puree. Add another 1/4 cup water and process until the sauce is vibrant green, smooth and the consistency of salad dressing.
