Corn on the Cob with Siracha Lime Butter

Ingredients

  • 4 tablespoons unsalted butter
  • 1 tablespoon finely chopped chives or cilantro
  • 1 tablespoon minced shallots
  • 1/2 teaspoon siracha
  • 1/2 teaspoon salt
  • Zest of 1 lime
  • 1 tablespoon lime juice
  • 4 ears yellow corn shucked

Instructions

  • Bring a large pot of salted water to boil.
  • Meanwhile, in a small bowl, combine the butter, chives or cilantro, shallots, siracha, salt, lime zest and juice. Microwave until melted, about 30 seconds. Set aside.
  • Add the corn to the pot and cook until vibrant, about 1 minute. Remove with tongs to a serving platter. Serve the corn alongside the siracha lime butter.
