Corn on the Cob with Siracha Lime Butter

  • 4 tablespoons unsalted butter
  • 1 tablespoon finely chopped chives or cilantro
  • 1 tablespoon minced shallots
  • 1/2 teaspoon siracha
  • 1/2 teaspoon salt
  • Zest of 1 lime
  • 1 tablespoon lime juice
  • 4 ears yellow corn shucked


  1. Bring a large pot of salted water to boil.
  2. Meanwhile, in a small bowl, combine the butter, chives or cilantro, shallots, siracha, salt, lime zest and juice. Microwave until melted, about 30 seconds. Set aside.
  3. Add the corn to the pot and cook until vibrant, about 1 minute. Remove with tongs to a serving platter. Serve the corn alongside the siracha lime butter.
