Crispy Spiced Black Eyed Peas

  • Two 15-ounce cans black eyed peas rinsed and drained
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¾ teaspoon salt
  • ¼ teaspoon cinnamon


  1. Preheat the oven to 400 degrees F.
  2. In a small bowl, toss the peas with the other ingredients until well coated. Transfer to a parchment-lined baking sheet. Roast in the oven until the peas are crispy but not blackened, about 30-45 minutes, redistributing once halfway through. Allow to cool on the baking sheet until room temperature. Serve in a bowl as a snack or use as a topping for salads or rice.
