Comfort food is a nice thing to think about today, when most of us are craving a comfort from bad news around the country. One thing my husband used to love was eclairs — I’d love to find a way to make them without traditional flour. : )

I’m gluten intolerant and all of my more favoritest food are not only inherently artery-clogging-sink-traps but also chock full of the glutens. Our family survived on takeout growing up, and the most celebratory of all takeouts: Chinese food. Many good memories in our family history are marked by spare ribs, beef-and-broccoli, moo shu duck, and beyond. I mean — what American Jew doesn’t think of chicken chow mein as the iconic Christmas dinner dish?
Phoebe – will you make me some Chinese (American) comfort food? If there’s a healthy, gluten-free dumpling or chow mein out there, I’ll eat it!
(ps I’ve found one woman in California who makes delicious gluten-free dim sum at my family’s local farmer’s markets. She’s the only one in the nation that I’ve seen do this! True magic/heart-filling/belly-quelling.

I’d be happy to come to your rescue Stefanie! A lot of those dishes can be easily made GF just by replacing soy sauce with GF tamari. I loooove moo shu. Perhaps you can eat it with a corn tortilla instead?! Or a lettuce wrap? I’ll work on it.
Wanted to pass along this brand I found that makes GF dumplings and egg rolls. Haven’t tried it yet, so if you do, please report back!

I just made fried plantains for the first time! They were awesome. Maybe there can be a baked alternative?

I have done baked plantain chips, but it’s hard to recreate the thicker smashed chunks in the oven. There have been quasi-healthier versions from my kitchen that are merely sauteed instead of deep-fried. Equally as delicious, but I know they can be better… my quest continues. As a Registered Dietitian, I must succeed!

With my Texas roots it’s all about BBQ and Mexican food. Wishing there was a way to do healthier brisket, fried okra, sweet potatoes… Also chicken enchiladas (although the cheese topping is the best part!)

Congrats on the anniversary! I was really sad when you and Cara “broke up”, but I am so happy that you have built this site up – it’s beautiful!
I love eggplant parmesan, but don’t really know how to make non-mushy eggplant. So I continue to order the ridiculously unhealthy version anytime we eat at an Italian restaurant. Please help me!

You MUST try my kale version! The dressing is roasted garlic vinaigrette – no egg, and you can definitely cut down on the cheese even more. It’s SO good.

Mashed potatoes, I trued to lighten them up with yogurt but nobody around here would eat that besides me. I do use a butter/olive oil mixture in them, ::still:: what other options do I have?

My mom always thins hers with just stock. It’s all about the texture. Then I add a tablespoon or so of olive oil to add that richness. you could also try earth balance? It tastes like butter. maybe see if they notice the difference!

Stock! yes! You know I had read that and just totally forgotten it. I made them last night again with the durn cow milk (which I hate) and my husband would eat them every single day if I allowed it. I bet he would have no idea if I tried stock.
