When the weather dips below 30 degrees, I admit that my best Farmer’s Market intentions usually fall victim to a fleece blanket and my Seamless web app. But come summer, I make up for lost time.
Martha’s Vineyard is my happy place, and there’s nowhere else in the world where I’d rather load up my basket with goodness from the garden and spend all week cooking it.
As you may remember from my Gut Guilt month, I’ve been trying to challenge myself to make it to the market once a week, keep my purchases to a budget of $40, and use the haul to prepare clean meals for the week ahead.
Since I’m trying to keep my head down and plow through pages of my book, I’m enlisting the help of some of my talented food blogging friends to bring you amazing ways to use your own Farmer’s Market Challenge produce. This week I’m sharing inspiration from my dear friend Amie of The Healthy Apple.
Amie is my go-to resource for all things detox. She’s spent the last decade healing herself from chronic illness by overhauling her diet and life. Her story is super inspiring, and she’s just an all-around gem of positivity in the midst of some serious medical trauma.
I hope you’ll check out her amazing summer salad recipes below and hop around her site for more wisdom on anti-inflammatory eating. Also, you can check out our Wellness Wednesday interview from last year on hypothyroidism!
Happy cooking!

I love what fresh beets do to a summer salad buffet. This salad is a great make-ahead option, and perfect for detoxing after a long weekend away with friends!
2. Roasted Cauliflower and Kale Bowl
Roasted cauliflower is a great year-round addition to any farmer’s market menu. I love the nuttiness it adds to this simple kale salad. Simply roast your head in advance and add it to the greens when you’re ready to eat.
This kale salad is packed with anti-inflammatory veggies, plus the ever detox-friendly pomegranate seeds!
4. Broccoli, Arugula and Blueberry Salad with Meyer Lemon Dressing
Summer blueberries get the savory treatment in this arugula salad. Save a handful from your pie filling so you can use it in this salad all week long.
5. Wild Rice Powerhouse Bowl with Basil Garlic Sauce
Fresh herbs and garlic add a bright punch to this hardy grain bowl. Try adding in any of the wayward veggie scraps from your farmer’s market challenge for even more goodness.
Amie does indeed a great work Phoebe, we just visited her blog to check out some of your wonderful suggestions. The best part is, she really CARES, she wants to inform people and make them aware of what they put in their bodies.
It’s so great that you wanted to share her work with all of us.
Thank you!
Panos and Mirella

Love the recipes. But – “Coral Snake” Salsa? Really? Ack! (thinking of the most poisonous snake in North America)
